So, a few weeks ago I gave up sugar and simple carbs during the week. GOSH IT’S GETTING HARD! This week it’s hitting me and been more difficult..UGH is it friday yet?! cheat day 🙂 I was looking online and found what looked to be like an interesting web site. I found a recipe that I want to try out: Paleo Oatmeal Cookies 🙂
2 egg whites
1/4 tsp sea salt
1/4 cup coconut crystals
1 dropper pure vanilla stevia
3/4 cup unsweetened shredded coconut3/4 cup almond flourCinnamon (as much as you like! I used about 1/2 tbsp)coconut oil to grease the cookie sheet
Preheat oven to 325
Mix the egg whites and salt for 2-3 minutes. Hand blender/kitchen aid works best.
Then add in the coconut crystals mixing for another minute or so. Add in the flavoring and coconut and mix until all the coconut is coated, then slowly add in the almond flour and cinnamon.
On a greased (coconut oil) cookie sheet. Place rounded spoonfuls of the mixture about 1 inch away from each other, press the spoonfuls down into a small circular cookie shape.
Cook 15 minutes or until tops start to brown.
I wonder if adding chocolate chips defeats the whole “healthy cookie” purpose 🙂
