a little banana nut

With all the frozen old banana’s in my freezer- I decided tonight would be a fun time to whip up a loaf of banana bread.  This is the recipe I used, but my mom has ALWAYS told me you never make banana bread without a handful of pecans and half a bag of chocolate chips!  So of course…I added them 🙂



1 2/3 cup Flour
1 1/2 teaspoon Baking Powder
1/4 teaspoon Baking soda
3/4 teaspoon Salt
1/2 cup Sugar
1 Egg beaten
1/4 cup Vegetable oil
1 cup Bananas mashed
1 tablespoon Lemon juice

PLUS: 1 cup pecans chopped, 1 cup chocolate chips

Sift together the dry ingredients.  Add 3/4 cup of the nuts.  Combine the remaining ingredients and add to the dry ingredients.  Stir only until the flour is moistened.  Pour into a greased 9×5 inch loaf pan.  Sprinkle the remaining nuts over the top of the loaf.  Bake in a 350 oven for 1 hour.
